I have been keeping cichlids for a number of years but I have never had a Midas which grew a large nuchal hump? They have at times had resonable sized humps while fighting for dominance with another fish but this soon returned to its normal size once the other fish was removed. Any advice would be welcome on how to stimulate its growth etc. the fish below is 10/11"

Not all males Develop a large humps. Some just don't, may also have to do with bloodline meaning it might have some Lab/RD mixed in there which will sometimes work against it. There are many factors. Water properties, quality of water, diet, Another male, a female. There are just so many factors.
